The Ginger Vegan created something truly amazing last week. Mairi caught my attention by her username, simple but I loved it straight away. When I discovered her account, I noticed she creates the most amazing sweet treats and melas, and most of all, they’re vegan! This recipe went viral and simply because, they’re supernova donuts!

Mairi wanted to create a recipe for a healthier donuts with no refined sugar. This might seem pointless if you then cover them in icing, but at least you are reducing the sugar as a whole! The ingredients listed are healthier alternatives to your usual donuts ingredients, even if you’re not vegan – these donuts are a healthier version of your Krispy Cremes! This recipe makes 12 standard sized donuts:

  1. 1 1/2 cups white spelt flour
  2. 3 tbsp cocoa powder
  3. 1 1/2 tsp baking powder
  4. 1/2 tsp bicarbonate of soda
  5. 2 tbsp ground chia seed
  6. 3/4 cup soy milk
  7. 1 tsp apple cider vinegar
  8. 1 tbsp vanilla extract
  9. 1/3 cup grapeseed oil
  10. 1/2 cup agave syrup



Stir the apple cider vinegar into the soy milk and leave for a few minutes.

Stir together the dry ingredients.

Combine the rest of the wet ingredients with the soy milk and then mix into the dry ingredients.

Spoon into greased donut pans and bake for 10 mins at 175°C or until a skewer inserted comes out clean.

Cool for a couple of minutes in tin before transferring to wire racks to cool.

For the icing melt 3 tbsp coconut oil then add 3 tbsp soy milk and mix well. Stir in 1 1/2 to 2 cups icing sugar or until desired consistency is reached.

For the galaxy effect drop food colouring on the top of the icing and swirl with a small spoon. Dip the donut in, swirl around and carefully lift out. Repeat for each one. Sprinkle with edible glitter for an extra special sparkle!
